How would I host a tournament?

I am thinking about hosting a tournament. I have two tables (at least access to two) and would like to do 8 to 10 at each table. My question is this.......I was reading Phil Gorden's book ("The Real Deal") and he talks about one of the tourney’s he's been in. In this descriptions he says that as players fall out, that the tournament officials move players to keep the board even. Is this how most of you who host multi table home tournaments do it. If so how do you determine who moves? If not then how would you set up a two table home tournament?

Any thoughts would be appreciated.

I have run a few 2 table tournaments in my weekly game and if we have 2 tables of 8 we play till some combination of 8 is on both tables. Then we form 1 table using random seating and restart with the blinds where we left off. Then the people who are still hanging aroung can start up a cash game on the side with the other table if they want.
